Yummy Steamed Bun or Dumpling Filling
This tempeh filling is for steam bun dough or dumpling wrappers. Your local grocery store may carry dumpling wrappers and/or steam bun dough. You can also find a great yeasted steam bun dough on the internet, such as this recipe from Saveur.
This recipe makes filling for 20 dumplings or 6-8 small steam buns.
Step 1: Prep a veggie filling
Ingredients
¼ c chive, thinly sliced
¼ c leek, thinly sliced
½ c onion, small dice
½ c mushroom, torn apart into small chunks
2 tbsp garlic, finely minced
Preparation
Mix your chive, leek, and onion in a bowl. Heat a medium-size pan with 3-4 tbsp of oil (sesame oil or canola/mixed veggie oil is recommended). Heat until cooked through at high heat. 2-3 minutes. Add a pinch of salt. Set aside. Rinse out the same pan and heat up the same amount of oil. Make sure the pan is nice and hot, look for a little smoke. Add your mushrooms, get a nice dark golden brown color. Don’t stir for 30 seconds or more, then begin to toss in the pan for 2-3 minutes and you should have well-seared mushrooms. Add the mushrooms to the onion and chive mixture.
Step 2: Pan fry the tempeh
Ingredients
8 oz tempeh (your favorite flavor), small dice
2 tsp cumin
2 Tbsp dulse flakes (optional)
Preparation
Heat a pan on high as you cube your tempeh with 1/4 cup sesame oil or canola oil. Add your tempeh once the pan is hot and cook it in the oil until browned on all the sides. Add the tempeh to your filling mixture.
Step 3: Pulse it up with some flavor
Ingredients
2 tbsp garlic, finely minced
1.5 tbsp soy
1 tbsp mirin
2 tsp chile flakes
2 tsp 5-spice powder
Preparation
Finely mince all ingredients to make a dressing, then add this dressing to the filling mixture. Briefly pulse all the ingredients together in a food processor—about 4-5 pulses should be plenty. You want it a little chunky and not quite smooth or pasty looking.
Step 4: Put together your buns or dumplings
That’s it. Prepare and enjoy.
Suggested Dipping Sauce
Ingredients
2 cloves garlic, minced
1 green onion, thinly sliced
3 tablespoons soy sauce or tamari
2 tablespoons rice vinegar or black vinegar
2 teaspoons sesame oil
1 teaspoon hot chile oil
Combine all ingredients in a bowl and enjoy dipping!
